How many pounds of beef will my cow produce once it’s cut and wrapped for my freezer?
The amount of meat cut and wrapped by your local butcher will be much less than what the live animal weighs at our farm. For example, a 1250-pound beef animal will yield a hot carcass weight of nearly 750 pounds. The hot carcass weight includes bone, excess fat, and moisture loss that will not be packed and wrapped for home consumption. Once cooled, the carcass weight will be around 730 pounds. When deboned and trimmed, there will be between 374-500 pounds of meat for wrapping and freezing.
View this resource from the University of Tennessee’s Institute of Agriculture for a detailed explanation of “How Much Meat to Expect from a Beef Carcass.” Here, you will also learn the yield for specific cuts of meat.
What size freezer should I buy to store my meat?
A half-cow will require a chest freezer of approximately ten cubic feet.

Does Bryan and sons use hormones on their beef cattle?
Bryan and Sons beef cattle are raised hormone-free. There are two categories of hormones common in beef cows – growth hormones and prostaglandins. We do not use either type in our beef cows.
What breed of cattle are raised for beef at Bryan and Sons?

How long can cut and wrapped beef be stored in a freezer?
You can safely consume meat stored in a freezer for up to two years. To enjoy the best in flavor, we recommend main cuts of meat that have been frozen for one year or less.
